- Preheat oven to 375° F.
- Divide barbeque evenly among four individual serving size oven-proof dishes. Set aside.
- In a medium sized bowl, prepare cornbread mix according to package directions but do not bake.
- Spread unbaked cornbread mixture evenly over the top of the brisket.
- Place the pot pies on the middle rack of the oven, and bake for 30 minutes, or until the cornbread topping is golden brown.
- Serve hot.
